was founded in 2012 to create restaurant, bar, and nightlife concepts in San Antonio, the city that we love so very much. We take pride in being independent, and offering a platform for creative, hardworking, fun people to do great work. We are at our happiest when we are making other people happy.
THE PEOPLE:
Sophie Covo (Director & Partner): Sophie joined Empty Stomach in 2014 & has been indispensable to the growth & success of the company…irrepressible & unstoppable when it comes to bringing parties to life.
Chad Carey (Principal): Chad founded the company…his background is in real estate development and all-things-culinary…he loves French wine, loud music, and weird food. Enthusiast of too-many-things-to-list.
John Philpot (Chef): John has worked for the company since before it existed…a brilliant culinary mind and an unmatched work-ethic. Durian & McDonalds (not necessarily in that order) enthusiast.
Tyler Roby (Controller): Ty joined Empty Stomach in 2016…she handles the accounting & financial reporting for our businesses…she is the glue that keeps all of our wild parts bound together. Anime enthusiast.
Cristin Boatright (Restaurant Operations Director): Cristin joined Empty Stomach in 2021…she has 20 years of corporate & independent restaurant operations experience…Black Pumas enthusiast.
